Vegan Almond Butter & Jelly Truffles Recipe Card

Vegan Almond Butter & Jelly Truffles Recipe

A healthy spin on nut-buttery, chocolatey truffles that may support cognitive function!

 

Ingredients

  • 1 Serving* MaryRuth's Almond Butter & Jelly Liposomal Smoothie with DHA & MCT 
  • 1/2 Cup Almond Flour 
  • 1/2 Cup Almond Butter 
  • 1/2-1 Tbsp Maple Syrup
  • 1 Pinch Salt
  • 1/4 Cup Dried Blueberries (optional) + more for garnish 
  • 1 Tbsp Blueberry or Other Berry Jam (optional)
  • 1/2-2/3 Cup Dark Chocolate Chips
  • 1/2-1 Tbsp Palm Shortening or Refined Coconut Oil

 

Instructions

  1. Add almond flour and almond butter to a small bowl and mix until combined.
  2. Add maple syrup and salt to taste and stir in dried blueberries (optional).
  3. Chill the almond butter filling in the fridge until just firm enough to roll. 
  4. Take ~1 tbsp of filling at a time and roll into balls. 
  5. Put a small dollop of blueberry jam onto each ball and spread thinly across truffle.
  6. Place truffles in freezer for at least 15 minutes to firm up. 
  7. Melt chocolate in a small microwave-safe bowl. 
  8. Stir in palm shortening or refined coconut oil (starting with 1/2 tbsp). 
  9. Add more if chocolate mixture is too thick (up to 1 tbsp total). 
  10. Dip each almond butter ball in chocolate and place on a plate or tray lined with parchment paper. 
  11. Place in fridge/freezer to harden. 
  12. Drizzle with Almond Butter & Jelly Liposomal Smoothie With DHA & MCT.
  13. Garnish with dried blueberries (optional).
