Almond Vanilla Bedtime Brittle Recipe
1 cup of sliced almonds
1/2 cup golden monk fruit
1/4 cup butter or vegan butter
1 1/2 teaspoons vanilla extract

Mix the monk fruit, butter, and vanilla extract all together in a saucepan.
Continuously stir until it reaches 300°F on a candy thermometer. The color will go from tan to brown to know that it’s done.
Once it reaches 300°F and begins to bubble and brown, mix in sliced almonds.
Pour the brittle onto a cookie sheet lined with parchment paper.

Chill in the fridge for one hour and then rough chop the brittle.
