Irish Soda Bread Biscuits with Green Frosting

MaryRuth grew up eating Irish Soda Bread every year, and that’s why she wanted to create this recipe for Irish Soda Bread Biscuits with a fun green frosting!

Irish Soda Bread Biscuits Recipe 



Enjoy this classic recipe with a twist in fun single-serving biscuits! 

Yields: 6 biscuits

 

Ingredients

  • Coconut Oil 
  • 1 cup Tigernut Flour (MaryRuth uses Organic Gemini Tigernut Flour**) 
  • 1/2 cup Arrowroot Flour (MaryRuth uses Bob’s Red Mill**) 
  • 1/4 cup Cassava Flour  (MaryRuth uses Otto’s Naturals**) 
  • 1 Free Range/Pastured Egg OR 1 Flax Egg
  • 1/3 cup Yellow/Green Pureed Plantain 
  • 1/2 cup Maple Syrup
  • 1/4 cup Palm Shortening (MaryRuth uses Nutiva**)
  • 1 tsp Vanilla Extract
  • 1 tbsp Cinnamon
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder 
  • 1/2 tsp Sea Salt
  • 1 tbsp PLUS 1 tsp Apple Cider Vinegar
  • 1 tbsp Water
  • 1/2 cup Raisins

 

Instructions

  1. Preheat the oven to 350 degrees F. 
  2. Lightly grease the inside of six (3 & 3/4-inch) English muffin rings with coconut oil and place them on a baking sheet lined with parchment paper. 

 

Note: you can find well-priced English muffin rings on Amazon! 

  1. In a food processor, puree peeled yellow/green plantain until completely smooth. 
  2. Add in maple syrup, melted palm shortening, & vanilla. Process until fully combined. 
  3. In a medium-sized bowl, sift together Tigernut flour, arrowroot flour, cassava flour, egg OR flax egg, baking soda, cinnamon, & sea salt. 
  4. Put the baking powder in a small bowl with the water and apple cider vinegar.
  5. Add both the dry mixture and baking powder mixture to the food processor plantain mixture and puree until a dough has formed.
  6. Stir in the raisins to the biscuit batter, then divide the biscuit batter among the 6 greased English muffin rings. 
  7. Place the biscuits in the oven and bake for 15 to 17 minutes. 
  8. Remove from the oven and let the biscuits cool for 15 minutes then gently press them out of the rings from the bottom. 
  9. Transfer to a cooling rack until they are completely cool before frosting them with the green frosting!

Vegan Green Frosting Recipe

While this can be used on any baked good, we love this green frosting on MaryRuth’s Irish Soda Bread Biscuits! 

 

Ingredients

  • 3/4 cup Palm Shortening (MaryRuth uses Nutiva**)
  • 1/2 cup Full-Fat Coconut Milk (left in the fridge overnight — use the top of the coconut milk off the can for 1/2 cup) 
  • 1/2 cup Cashew Butter (MaryRuth uses Artisana Organics Raw Cashew Butter**)
  • 1 ½ cups Sifted Maple Sugar made from 100% Maple Syrup (if you want a sweeter frosting, use 1 ¾ cups & taste as you go) 
  • 1 tbsp Sifted Coconut Flour 
  • 1 tsp Vanilla Extract 
  • 1 dash Fine Pink Sea Salt 
  • 1 Box Natural Food Coloring Dye (MaryRuth uses Nature’s Colors Decorating Set by India Tree**)

 

Instructions

  1. In the bowl of a stand mixer fitted with the whisk attachment, combine the palm shortening, coconut milk, cashew butter, and sifted maple sugar and beat on medium-high speed until combined for 5 minutes. (If you do not have a stand mixer you may use a hand mixer.)
  2. Add the sifted coconut flour, vanilla extract, and sea salt and beat again until incorporated. 
  3. Time to make the green color natural food dye! Read the instructions on the box and use two clean bowls to mix your colors. Take blue and combine it with yellow to make green! 
  4. Add the natural green food dye to the frosting and beat until incorporated and the exact green color you want has been achieved. 
  5. Frost your cooled Irish Soda Bread Biscuits or other baked good, and enjoy them with family, friends, and co-workers!
