Using monk fruit instead of sugar and coconut milk in place of regular milk, you won’t be missing out on any flavor of this twist on a traditional rice pudding!

 

There are all the creamy, soft, and sweet flavors and textures that you’d expect from another rice pudding here, all with ingredients that may fit into the lifestyle of someone with alternative dietary preferences.

Sugar-Free & Vegan Rice Pudding Recipe Card

 

Sugar-Free & Vegan Rice Pudding

A dairy-free yet delicious & creamy take on traditional rice pudding! 

 

Ingredients:

  • 5 ½ cups full-fat coconut milk
  • ½ cup jasmine rice, uncooked
  • ½ cup monk fruit sweetener
  • ½ teaspoon sea salt
  • Cinnamon to taste (optional)

 

Directions:

  1. Add the coconut milk to a large pot.
  2. Stir in the jasmine rice, monk fruit sweetener, and salt.
  3. Bring to a boil.
  4. Reduce to simmer for 1 hour with the lid off the pot.
  5. Add cinnamon (as much or as little as you want).
  6. Let cool for 30-45 minutes.
  7. Transfer to a food-safe storage bowl and put in the refrigerator to cool for 12-48 hours.
  8. Enjoy!
