Vegan & Gluten-Free Garlic Black Pepper Mac & Cheese Recipe

This recipe is for a simple, one-serving bowl of tasty mac & cheese that is dairy-free, gluten-free, and vegan! The garlic and black pepper really kick the flavor up a notch from your basic mac & cheese.

Vegan & Gluten-Free Garlic Black Pepper Mac & Cheese Recipe

 

Ingredients

 

  • Gluten-free pasta of your choice
  • 5 garlic cloves
  • Garlic powder
  • Salt & pepper
  • Vegan cheddar cheese
  • Olive oil

 

Instructions

 

  1. Cook pasta according to package directions and set aside. Note: You may also use leftover cooked pasta! 
  2. Chop or press 5 cloves of garlic.
  3. Add 1 tablespoon of olive oil into a pan on medium heat.
  4. Once oil starts to slightly bubble, toss in fresh garlic and turn heat to low. Tip: Garlic burns easily so watch it carefully!
  5. Add a bit more olive oil into the pan along with fresh black pepper, salt, and garlic powder. Let simmer.
  6. Add a serving of cooled, cooked pasta to the pan and toss around for a few minutes until warmed. Set pasta aside in a bowl.
  7. Break up two slices of vegan cheddar cheese and toss into the hot pan.
  8. Once cheese starts to bubble, pour it onto the pasta and stir to coat. Enjoy!
