If there’s one way to make that feeling even better, we think that a seasonal, on-theme treat does the trick! We’re sharing a yummy and creative snack to make for the kiddos (and yourself) that will appeal to both the taste and visual senses.

Vegan Beach Jello Cup

Cool down & find your paradise with this fun, delicious treat! 

Makes 2-4 servings

 

Ingredients

  • 1 Cup Pineapple Juice (or fruit juice of choice)
  • 1 Cup Water
  • 2 Tbsp Dried Butterfly Pea Flowers
  • 1 Tsp Agar Agar Powder
  • 2-3 Tbsp + 1 Tsp Monk Fruit (divided)
  • 2 Tbsp Almond Flour Dash
  • Cinnamon powder (optional) 
  • 1/4 Serving MaryRuth's Coconut Whipped Cream Recipe
  • 1 Serving (1 Gummy) MaryRuth's Kids Multivitamin Gummies
  • 1-2 MaryRuth's Omega 3-6-7-9 Gummies (optional)

 

Jello Instructions

  • Pour 1 cup hot water over 2 tbsp of dried butterfly pea flowers.
  • Let steep for 2 minutes then strain flowers.
  • Add the butterfly pea tea to small pot with 1 cup pineapple juice (or fruit juice of choice) or water (for bluest color).

 

OR

 

  • Combine 1 cup of fruit juice of choice with 1 cup water in a small pot.

 

Next:

  • Add 2-3 tbsp monk fruit (to taste) and 1 tsp agar agar powder to liquid in pot and bring to a boil on medium heat.
  • Let boil for 2 minutes while stirring constantly.
  • Transfer liquid into 2-4 small cups and let cool slightly.
  • Once cool to touch, transfer cups to fridge and let firm up overnight.

 

Assemble Instructions

  1. Make 1/4 recipe of MaryRuth’s Coconut Whipped Cream.
  2. Layer 1-2 tbsp of whipped cream and create small peaks with back of spoon to resemble waves.
  3. Combine 2 tbsp almond flour, 1/2 tsp monk fruit, and (optional) a dash of cinnamon in a small bowl.
  4. Layer sand mixture on top of coconut whipped cream.
  5. Garnish with 1 Kids Multivitamin Gummies per cup and 1-2 Omega 3-6-7-9 Gummies (optional, following serving size).
